Each product of the sea stamped Pavillon France is issued from the French fishing, its traceability is guaranteed to you from the sea to the plate.
All the fish fillets are flash frozen immediately after being fished and treated. They are subject to cryogenic temperatures by direct contact with liquid nitrogen (N₂) at -60°C or carbon dioxide (CO₂ ) at -42°C. This process enables the optimum preservation of the fish nutritional values , less water loss during thawing, and a longer shelf life.
